Crust
2 cups flour
1/2 cup + 1 tbsp (150g) cold butter, cubed
1/2 tsp salt
1/4 cup ice cold water
Cut butter into flour and salt.
Add water to form dough.
Chill in the fridge for at least 30 minutes.
Roll out individual circles of thin (1/8") dough.
Lay dough in muffin pan openings, cut off extras from the top.
Fill with filling of your choice.
I had some with ham and cheese, some with cauliflower, all topped with fresh parsley and scallions.
Wisk together 4 eggs, 2 cups heavy cream, and salt and pepper to taste.
Pour the mixture over filled crusts.
Bake at 425F for 15 minutes.
Lower temperature to 350F and bake for another 20 minutes.
