| Puff Pastry |
[29 Dec 2009|09:44am] |
With new years coming and left over Puff Pastry from Christmas I am looking for a dessert to make with it. I cannot think of anything to make, and the crowd there will be a lot of kids and "picky" eaters, the like "normal" foods sadly. Any ideas?
Thank you!

| Champagne & Cheese Fondue |
[29 Dec 2009|11:17am] |

I served this on Christmas Eve ~ and yes, despite the grainy 1960s nature of that picture above, it was only taken last Thursday evening :P
Champagne & Cheese Fondue ~ adapted from The Fondue Cookbook
1 c. mushroom caps 2 c. champagne 4 c. grated Swiss cheese (I used 3c Jarlsberg & 1c Gruyere) 2 TBS-1/4thc. all-purpose flour 2 egg yolks 1 tablespoon cream (I used half and half) salt & pepper to taste
Place mushroom caps in a pot with just enough water to cover them and bring to a boil. Cook for five minutes. Drain – but reserve 1/4th of the water. Slice the caps very thinly, set aside.
Heat champagne slowly in the fondue pot over the stove. Stir in the cheese, melt and sprinkle the flour in slowly to use as a thickening agent. You may need more/less than called for. Stir constantly until completely melted & smooth.
Combine egg yolk, cream, reserved liquid and sliced mushrooms caps and stir into the fondue. Do not bring to a boil!
Season with salt & pepper to taste.
Transfer mixture to the table & burner.
Dippers: French bread, medium cooked shrimp, cooked asparagus tips, raw broccolini, cucumber, small cooked potatoes, baby carrots, salami, mushrooms.

| Taco Stuffed Crescent Rolls |
[29 Dec 2009|01:30pm] |
This is one of my favorite quick and easy dinner options: Taco Stuffed Crescent Rolls. You can bake them with Pillsbury (or generic) big and buttery crescents, or use leftover yeast roll dough. They're stuffed with a creamy, gooey, cheesy, spicy, meaty mixture and topped with toasted cheddar. Even more delicious than the sum of their parts!

I've got a small pot roast and I'd like to do something other than just toss it in the crock pot. How can I make it a little more interesting?

| Of Apple Crumbles and Custard sauce... |
[29 Dec 2009|03:01pm] |
New Year's Eve is coming in two days. My friends and I are hosting a full-blown party for the occassion. The main host (the house owner) is dealing with all the food including a roast chicken :9. I'm in charge of dessert (hallelujah!) and cocktails.
I'll be making an awesome chocolate cake with oreo cream cheese, which I made for her birthday. (can be seen in this shitty picture here). Anyhow, I'll be attempting to make a combination of Apple, Blueberry and Cranberry Crumble and in need of a really good no fuss custard sauce. The tricky part is....not to use those vile powdered stuff. Any recs?
Also, what other dessert that requires minimum prep, which is also good as party snacks? Ideas are most welcomed! Thanks!

| Recipe suggestions for small, shallow souffle dish |
[28 Dec 2009|05:21pm] |
I was recently given this dish:

As you can see, it's not much bigger than my palm, and quite shallow. I don't know what to bake in it! All the souffles I know of are quite large, or look like they need a deeper dish, like a ramekin, to puff up in. Any suggestions? Sweet and savory are both lovely.
Thank you!

| Ribs? |
[28 Dec 2009|09:24pm] |
|
Is there a way I can do ribs in the crock pot? More specifically, ribs in the crock pot without a kind of barbecue sauce? I have a craving for slow cooked ribs, but we have a lot of running around to do tomorrow, and don't want to leave the oven on while we're gone.

( A rather lengthy explanation )
To sum it all up, I’m looking for suggestions on different carbohydrates she can eat that do not include wheat, peanuts, soy, rice, or corn, and some kind of bread recipe would be absolutely fantastic as well. She can have yeast and potatoes, which helps a lot. Additionally, any good granola recipes or pasta recommendations would be much appreciated. Thanks so much!

| Vanilla Wafer! |
[28 Dec 2009|08:45am] |
Merry Christmas to everyone! :D
I wanna ask you - since we don't have vanilla wafer in my country, what is the size of one of this cookies?
Because I wanna bake mini cheesecakes and the recipe calls for vanilla wafer, and say that the tin is 2", but in my country we use the International System and that's about 5cm - regular tin. But then, reading the comments, say "it's a mini muffin/cupcake size".. but then, a mini muffin is a baby on diapers if you compare it with a regular muffin.
I hope you can help me! or suggest me another crust different of graham crust, because we don't have graham in my country neither :/
A lot of kisses :*

| Coconut Cake |
[27 Dec 2009|10:24pm] |
I set myself to the task of recreating my Grandmother's coconut cake this holiday. It was something my entire family looked forward to, but with her death the recipe was lost (we thought). After Thanksgiving I tried one recipe, but it wasn't quite right. I was getting set to try another when my Mom told me she had found a recipe card with my Grandmother's recipe. She sent it to me and I made it last Friday. It was like bringing a Christmas memory to life.

It's not exactly a traditional Southern recipe, since the frosting isn't a true seven minute frosting, but it's still damn yummeh. And it has absolutely no regard for health. It takes 17 eggs to make this cake.
( recipe with my notes at bottom )
